Some folks dream of a white Christmas, but visions of tamales dance in my head. It’s tamale season.  Tamales date back to the Aztecs, Mayans and Incans. The word “tamale” comes from the Aztec word for wrap. Tamales, made from corn, were sent out with hunters, travelers and soldiers. They became a part of ceremonies, rituals, feasts and fiestas.  Aztecs had holidays showcasing tamales…
