Waterloo Coffee Company serves a hot cup of community in Georgetown

A new coffee trailer on West Highway 29, Waterloo Coffee Company opened this fall and invites the community to celebrate twelve days of Christmas at the South Fork Food Truck Park.

Waterloo is owned by the wife-and-husband team of Amy and Mike Bresnan, who moved to Georgetown in 2016 when looking for a good place to raise their children.

“We wanted to live somewhere they wouldn’t move away from us,” Mrs. Bresnan joked.

The couple previously owned a construction company but always wanted to open a coffee shop someday, not because they particularly love coffee, but because of the sense of community coffee creates.

“We love people,” Mrs. Bresnan said. “Serving coffee gives you the opportunity to interact with lots of people every day” She said her favorite part of serving peopie is “getting to know them two minutes at a time.”

After opening two months ago in September, she said they have already bonded with customers so much that they have been asked to house sit and look after dogs.

“That’s been really special to make that connection to the community” she said. “Coming off Covid and being so isolated, I think people are hungry for interaction.”

The Bresnans chose their location at South Fork when they realized how highly trafficked Highway 29 is. After researching the cost of a brick-and-mortar coffee shop, they decided to opt for a trailer instead and operate primarily as a drive-through.

Mrs. Bresnan said they still hope to set up a permanent shop in Williamson County to provide a place with a sense of community “We want it to be like Mesquite Creek Outfitters, but for coffee instead of beer,” she said. “A place with kids running around and families hanging out.”

The couple also recently purchased another trailer, which they hope will serve as a mobile counterpart to use for events.

Staying true to Texas is an important factor for the business, Mrs. Bresnan said, and their drinks reflect that. Their beans are roasted in Texas and they created thenown blend to use in their specialty coffees, which include the GTX—a chocolate, macadamia nut and vanilla latte — or the Tejas — with Mexican mocha and orange. They also offer coffee “shakes,” a fast-growing trend.

In the spirit of Christmas and bringing the community together, Waterloo will be celebrating the twelve days of Christmas starting December 10, with a new offering every day Events will span from cookie decorating workshops to photo booths and will be announced on the company’s Instagram and Facebook pages. New holiday drinks will also be released in the coming weeks.
